INGREDIENTS (serves 3)

  • 2 cups almond flour

    • 1 tsp baking powder

    • 1 tsp cinnamon

    • ¼ tsp sea salt

    • 4 large eggs

    • ¼ cup unsweetened almond milk

    • 1 tbsp maple syrup (or monk fruit if lower sugar)

    • 1 tsp vanilla extract

    • ⅓ cup dairy-free chocolate chips or blueberries

    • 1 scoop vanilla protein powder (plant-based or collagen)

Method:

  • Preheat oven to 350°F and lightly grease an 5x7 Pyrex baking dish.

  • In a large bowl, whisk together all wet ingredients.

  • In another bowl, mix dry ingredients. Then combine with wet.

  • Fold in chocolate chips or berries if using.

  • Pour batter into Pyrex and smooth the top.

  • Bake for 25–30 minutes, until a toothpick comes out clean.

  • Let cool, slice into 6 squares, and store in the fridge.
