Healthy "Velvet Taco" Buffalo Chicken Tacos
INGREDIENTS
Protein Base:
2–3 gluten-free breaded chicken tenders
2–3 tbsp Primal Kitchen Buffalo Sauce
Taco Shell Options (choose one or mix & match):
Egglife Wraps – light and high-protein
Siete Tortillas – soft and grain-free
Lettuce Wraps – crisp and refreshing
Toppings:
¼ cup thinly sliced carrots
Handful of microgreens (or shredded romaine)
1 tbsp nut-based blue cheese crumble (I like the brand nuts for cheese)
1–2 tbsp dairy-free ranch dressing (I like Gotham Greens)
Method (BASE):
Step 1: Air Fry the Chicken. Preheat air fryer to 375°F. Place gluten-free breaded chicken tenders in the basket and cook according to package directions (usually 10–12 minutes), until crispy and golden.
Step 2: Toss in Buffalo Sauce. Once done, place the chicken in a bowl and toss with Primal Kitchen Buffalo Sauce until evenly coated. Slice into smaller pieces for easy layering in your wraps or tacos.
Step 3: Prepare Your Base. Warm Egglife wraps or Siete tortillas briefly in a skillet or microwave for 10–15 seconds to soften, or rinse and pat dry your lettuce leaves for a crisp option.
Step 4: Assemble Your Tacos. Lay out your wrap of choice. Add a layer of buffalo chicken.
Top with thinly sliced carrots, a handful of microgreens, and a sprinkle of nut-based blue cheese crumble.
Finish with a drizzle of dairy-free ranch.
Step 5: Serve & Enjoy: Fold and enjoy immediately while warm and crisp.
